Home Chef: Gnocchi alla Sorrentina 🍅

In Osteria’s Home Chef edition we showcase simple italian recipes you can do at home with supermarket ingredients only. Recipe below 👇😊

🥫Ingredients
• 500g gnocchi (check how to do gnocchi by scratch @osteriadeimancini )
• 1 can pelati tomatoes
• 300ml passata
• 2 mozzarella
• 200g parmesan or Grana Padano (or mix)
• Basil
• 2 garlic cloves
• Olive oil
• Salt

👩‍🍳 Instructions

1. Heat olive oil in a pan (be generous). Add garlic and gently cook. Don’t burn it.
2. Add pelati and passata. Let it cook on high heat for a few minutes. Remove the garlic. Season with salt (you can add some herbs of your choice, but don’t overdo it).
3. Simmer on low heat for at least 30 minutes.
4. Cook gnocchi in boiling water until they float.
5. Combine gnocchi with the sauce in an ovenproof dish.
6. Stir in parmesan/Grana Padano and one mozzarella.
7. Top with more cheese and the second mozzarella.
8. Bake at 180°C for 25–30 minutes.

Home Chef: Gnocchi - Here’s Osteria’s simple recipe:

🥔 Ingredients:
• 500 g potatoes
• 120 g 00 flour
• 1 egg yolk
• Pinch of salt

👩‍🍳 Instructions:
1. Bake the potatoes in the oven inside folio for 30 minutes, 200 degrees.
2. Let them cool slightly, then smash with a fork or a potato smasher.
3. Add the flour gradually and gently knead until you get a soft dough (don’t overwork it).
4. Add the eggyolk
5. Add pinch of salt
6. Let it rest for 10 minutes
7. Divide the dough into pieces, roll into long ropes, and cut into small bite-sized gnocchi.
8. Cook in salted boiling water. They’re ready when they float (about 2–3 minutes).

Next we’ll show how to serve these in a dish called Gnocchi alla Sorrentina 🥰
